If you can, go and visit a mill in full swing. Late October, early November, just take one day to enjoy the magic of the olives that immediately become golden-yellow oil.
There is everything in the mill. The old millstones, the cry of heavy presses but also the mechanical strength of the new plants; that seem to swallow the olives as a "carsico" phenomenon.
And there comes the oil and you can’t wait to taste it…
